Tomato soup

Recipe for a tasty sweet and sour tomato soup.

Ingredients:

  • 1 liter of water
  • 2-4 tbsp of tomato paste
  • 70g / 2,5oz  soup noodles
  • 5 whole peppercorns
  • 4 allspice 
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 small onion
  • 1 tbsp vinegar
  • 2 tbsp sugar
  • Salt
  • Fresh basil for garnish

Recipe steps:

  1. Bring water to a boil and add the tomato paste, onion (cut in half), and all the spices.
  2. Simmer everything for about 20 minutes, then remove all the spices from the soup.
  3. Season the soup with 1 tbsp of vinegar and 2 tbsp of sugar; add salt to taste if needed.
  4. You can thicken the soup with a roux, or simply add soup noodles, which work just as well.
  5. Serve immediately, ideally garnished with fresh basil, which will add a lovely aroma to the soup.
