Spaghetti Carbonara

Roman-style pasta recipe with bacon and eggs.

Ingredients:

  • 100g / 3,5oz bacon
  • 100g / 3,5oz grated parmesan
  • Three whole eggs
  • 300g / 10,5oz spaghetti
  • Two garlic cloves
  • 20g / 0,7oz butter
  • Salt and pepper

Recipe steps:

  1. Crush and slice the garlic cloves.
  2. Cut the bacon into cubes.
  3. Crack three eggs which we whisk, add salt and pepper (to taste). Then add the grated cheese and mix.
  4. Put the spaghetti in the pot, add a spoonful of salt, and cook the pasta according to the instructions on the package (leaving some cooking water aside before we pour the water).
  5. In a frying pan, melt butter and then stir-fry the sliced bacon and garlic (just for few minutes so the garlic doesn't turn bitter).
  6. Add the pasta to the pan to mix with the bacon, then pour all over the egg mixture. We pour all over the spaghetti water (not clean water, the sauce would make lumps).
  7. Heat the mixture in a frying pan and we can serve immediately.
  8. When serving, lightly garnish with grated cheese.
