Peach iced tea

Delicious peach iced tea served in glass with ice, decorated with peach pieces and sprigs of mint. Iced tea grew from summer fair drinks in the United States into a warm weather staple worldwide. Peach is a favorite because it delivers both richness and freshness. Making it at home lets you control sweetness and strength.

Ingredients:

  • Green tea (preferably peach-flavoured)
  • 2 tbsp sugar
  • 2l / 70 fl.oz / 8,5 cup hot water
  • 2 tbsp lemon juice
  • Ice
  • Peach
  • Mint

 

Recipe steps:

  1. Pour sachets of tea with boiling water and leave for 8-10 minutes, then pull out the sachets.
  2. Sweeten the tea and put cold tea in the fridge to cool thoroughly (ideally overnight).
  3. Put ice cubes in glasses, add sliced peach pieces and top with tea.
  4. A glass of tea is still decorated with sprigs of mint and served.


Before you start:

  • Tea choice: peach fruit tea for a gentle profile. Peach flavored green tea for a fresher grassy note. Black tea for a bolder base. Rooibos for a caffeine free option.
  • Brew temperature and time: fruit blends 95-100 °C for 8-10 minutes. Green tea 75-85 °C for 2-3 minutes to avoid bitterness. Black tea 90-95 °C for 3-5 minutes.
  • Sweetening: dissolve sugar in hot tea or use a simple syrup made by simmering equal parts sugar and water then cooling.
  • Chilling: speed it up with an ice bath around the pitcher. Cold brew in the fridge for 6-12 hours gives a very clean taste with no bitterness.

Peaches and flavoring:
  • Toss fresh peach slices with a little sugar and lemon juice. The released juice flavors the drink beautifully.
  • If fresh peaches are not available use frozen or canned peaches. Add a spoon or two of the can syrup.
  • Fresh herbs work best. Mint is classic and lemon balm is a nice alternative.

Variations and ideas:
  • Sparkling twist: top each glass with a splash of sparkling water.
  • Citrus lift: 1-2 tbsp lemon juice in the pitcher balances sweetness.
  • Spiced note: a few slices of fresh ginger or a piece of vanilla pod brewed with the tea.
  • Lighter approach: reduce sugar and add a little peach purée instead.
  • Tea ice cubes: freeze brewed tea for ice cubes so the drink does not dilute.

Serving:
  • Fill glasses with ice, peach pieces and mint. Pour chilled tea. 
  • A thin lemon slice on top looks nice. 
  • For larger batches use about 1 tea bag per 300-350 ml water and taste as you go.

Storage:
  • Refrigerate in a clean pitcher for 2-3 days. 
  • Add fruit right before serving to keep the tea clear.
